September Menu

I'll be posting the Menus Weekly for the month of September. If you'd rather, I also have paper calendar copies I'd be glad to send you- just let me know!

Wed. Sep. 1- Oven fried fish fillets, served with coleslaw, onion rolls, and a small salad

Thu. Sep. 2- Chicken Fajitas; all the ingredients for a fabulous fiesta! Chicken, Tortillas, Salsa, Cheese, Peppers & Onions, Sour Cream, Guacamole, Black Beans and Rice

Stay tuned for next week's menu (to be posted on Fri. 9/3/10). I will be out of town over Labor Day Weekend, so Mustard Seed Meals will resume on Tue. Sep. 7, 2010.

*Also, beginning in October, every Sunday I'll be making a homemade soup. Order yours by noon on Sat. Cost is $5.00 per serving, with a 2-serving minimum. These are made fresh each week, and can be frozen up to 3 months. If you order on Sat., it will be delivered on Mon. (or any day you choose that week). Some of the recipes to look forward to: Lentil, Black Bean, Vegetable Beef, Chicken & Dumplings, and Chilli. Yummy for lunch at the office, or for supper on a chilly evening-

My New Favorite

I've never been a fan of Rachael Ray. Not that I didn't like her, I just never saw her show, read her magazine, etc. Recently, I was home and saw her show as she prepared Homemade Fish Sticks. Heathy (o.k. healthier), oven fried fish. I'm hooked! Frozen cod, tillapia, halibut filets are cheap. Breading them in Panko bread crumbs (seasoned) and melted butter- YUM! I cut the filets into nuggets for the kids before breading and baking them. I kept our filets whole and served them on a warm onion roll with coleslaw and home-grown tomatoes. This will be on our dinner menu rotation for awhile! Want the recipe? Let me know & I'll email you the link!
